Category: Dry white wine.

Grape: 100% Chardonnay.

Classification: D.O.C. Friuli Grave.

Production area: Dandolo area foothills in west-central Friuli.

Vineyard yeld: 70 hl/ha. (3.1 tons/acre).

Vineyard elevation: 250 m. (820 ft.).

Training system: Sylvoz.

Vine density: 4,000-4,500/ha. (1,620-1,820/acre).

Harvest date: September 10-20.

Production: De-stemming and crushing, with a half-day cold maceration on the skins, followed by racking and inoculation with special yeasts. Cool (16o-18oC/61o-64oF) fermentation in stainless steel, followed by racking off the lees.

Ageing: Four-five months’ sur lies maturation exclusively in stainless steel.

Quantity: Approx. 1,000 cases.

Color: Green-tinged straw-yellow.

Bouquet: Rich, fruity aromas of citrus and apple with jasmine-laced floral notes.

Palate: Soft, silky mouth-feel, with a lively acidity and supple flavors in perfect balance; the finish is impressive, concluding with the floral and appley characteristics encountered in the bouquet.

Recommended food: A wide variety of light-style antipasti; with pastas and light soups. And try it with egg-based dishes.

Serving temperature: 10°-12°C (43°-54°F).
