  PINOT GRIGIO  



Category: Dry white wine.

Grape: 100% Pinot Grigio.

Classification: D.O.C. Friuli Grave.

Production area: Dandolo area foothills in west-central Friuli.

Vineyard yeld: 70 hl/ha. (3.1 tons/acre).

Vineyard elevation: 250 m. (820 ft.).

Training system: Sylvoz.

Vine density: 3,800-4,500/ha. (1,540-1,820/acre).

Harvest date: September 5-15.

Production: After crushing and light pressing, overnight cold maceration on the skins; racking and inoculation with special yeasts. A final racking just before bottling.

Ageing: Four-six months’ maturation in stainless steel.

Quantity: Approx. 2,000 cases.

Color: Straw-yellow.

Bouquet: Aromas of spring flowers and fruit, in particular pink grapefruit and pineapple.

Palate: Soft, rounded, and supple in the mouth, with a pronounced and pleasant acidity lending a refreshing edge to the flavors.

Recommended food: All antipasti, especially those with prosciutto; light soups. Ideal as an aperitif enjoyed on its own.

Serving temperature: 10°-12°C (43°-54°F).
