Category: Dry white wine.

Grape: 100% Sauvignon Blanc, from several clones.

Classification: D.O.C. Friuli Grave.

Production area: Dandolo area foothills in west-central Friuli.

Vineyard yeld: 70 hl/ha. (3.1 tons/acre).

Vineyard elevation: 250 m. (820 ft.).

Training system: Sylvoz.

Vine density: 4,000-4,400/ha. (1,620-1,820/acre).

Harvest date: September 15-20.

Production: De-stemming, crushing, and light pressing, followed by overnight cold settling of the must, then inoculation with special yeasts.

Ageing: Four-five months’ sur lies maturation exclusively in stainless steel tanks.

Quantity: Approx. 830 cases.

Color: Green-tinged straw-yellow.

Bouquet: A rich profusion of aromas, prominent among them tropical fruits, yellow sweet pepper, and a certain characteristic flintiness.

Palate: An immediate impression of silky richness, with just the right level of acidity enlivening the wine and supporting an impressive suite of aromatic compounds; the tropical fruits, so evident in the nose, return in the lengthy finish.

Recommended food: Perfect with antipasti and cured prosciutto; with full-flavored fish and shellfish such as lobster, crayfish, and prawns; with vegetable and fish purees.

Serving temperature: 10°-12°C (43°-54°F).
