The Sauvignon blanc grape, originally from
France, has been present in Friuli since the second half
of the eighteenth century and has flourished here. Our
Sauvignon Blanc fairly bursts with a bouquet of rich aromas
and unique flavors--grapefruit, tomato leaf, and that
classic pungent flintiness. Floral and fruit notes meld
together in the mouth; overall, the wine demonstrates
extraordinary suppleness and depth.
The vineyards are located at 300 m. (ca. 1,000 ft.)
elevation in the Dandolo uplands near the hills in west-central
Friuli. The gravelly, limestone soils are shallow, but
nutrient-rich.
The grapes were hand-picked, into shallow trays, between
the second and third weeks of September.
The whole clusters were lightly pressed and the must
given an overnight cold maceration. After a settling
period removed the solids, selected yeast strains began
the fermentation. After fermentation and an initial
racking, the wine rested on the remaining lees until
the following spring.
Our Sauvignon Blanc matures in stainless steel until
bottling, which usually takes place in April or May
of the year after harvest.
