This wine is an assemblage of 60% merlot
and 40% cabernet franc, both traditional grape varieties
in Friuli. Stuccara is the winery standard-bearer and
is not produced in all vintages (it was not bottled in
1994 and 1995). The wine releases an amazing range of
aromas: vanilla, butter, black pepper, and cinnamon, qualities
deriving in part from the grapes, and in part from its
maturation in small oak barrels. On the palate, it shows
excellent progression, with a rich, smooth, and rounded
texture, with nuances of blackberry, chocolate, and tobacco
leaf in the mouth.
The grape are sourced from the Collio Goriziano area,
from vineyards 38 years and 21 years old, respectively
for the two varieties. The soil is rich in organic material,
but clayey and not well-drained. These characteristics,
when combined with severe cluster-thinning practices,
give us fruit with superb concentration and high sugars.
Exclusively by hand in the first week in October.
The grapes, with no more than 25-30 kg per picking box,
are brought to the cellar and destemmed, then remain
10-15 days in steel vinification tanks to obtain a must
rich in colour and soft tannins. After a light pressing,
the must returns to steel to ferment.
When the alcoholic and malolactic fermentations are
complete, the wine matures for 15-18 months in small
French and American oak barrels before being bottled.
