Tai is a wine that our family holds dear.
In the Friulano language, tai is the word for “wine
glass” but also for “cuvée,”
or the final blend of a fine wine. For us it is both:
it is our finest glass of Castelcosa wine and the product
of the most promising individual lots of wine from a particular
harvest. Tai, however, is not a fixed “recipe”--its
blend will reflect the changing character of each vintage
year, with the one proviso, however, that it always contain
Tocai Friulano.
An intense straw-yellow, Tai offers a bouquet rich with
bell or sweet pepper and ripe white peach, along with
hints of rose petals and broom blossom. It has a crisp-edged
full-bodied richness in the mouth, and finishes with an
attractive hint of bitter-almond.
The grapes were sourced from central Friuli’s
valley viticultural areas and from the Magredi foot-hills
at approx. 350 m (1,100’) elevation.
The grapes were all hand-picked, from mid-September
through early October, depending on local weather conditions
and each grape variety’s ripening cycle.
Since Tai is a cuvée, or blend, its component
wines were produced with different types of fermen-tation,
ranging from cold maceration to traditional fermentation,
with various strains of yeasts and different temperatures.
Each of the wines was produced individually; only in
the following spring were they carefully blended to
create a unique wine of great balance, one with rich
flavors, solid structure, and complex aromas.
Maturation was in stainless steel, followed by a minimum
of three-months’ bottle-ageing before release.
