Because of its unmistakable, unique bouquet,
Traminer, in our opinion, ranks as one of the most intriguing
of wines. With aromas redolent of ripe yellow peach, elder
and lime blossoms, it offers good weight in the mouth
on an impressively firm structure. A pleasant, tart acidity
achieves a perfect balance with soft, rounded flavors,
and the lengthy finish ends on a decisively fruity note.
The vineyards are located in the central-west Friuli
foothills at about 250 m. (800’) elevation, in
nutrient-rich, gravelly soils largely of limestone,
and well-drained. They are trained to the Sylvoz system
at a vine density of 4,000/ha. (1,620/acre).
The fruit is harvested into picking-trays. Harvesting
is carried out as late as possible in the season to
ensure the ripest possible grapes, thus concentrating
the aromatics that are so prized in Traminer.
The clusters are de-stemmed at the winery then undergo
a 12-hour cold maceration in stainless steel tanks.
They are then pressed and the must is given an overnight
cold settling to remove solids. Selected yeasts then
begin the fermentation.
Following fermentation, the wine is carefully racked,
then rests on the remaining lees until bottling, usually
the following April/May.
