De-stemming and crushing followed by cold maceration
on skins for about ten hours. Light pressing, then a
one-day cold settling, followed by racking and inoculation
with special yeasts.

amber-tinged gold-yellow.
Floral
notes of lime blossom, scents of ripe apricot, plus
an intriguing hint of airplane glue from the tannins
characteristic of this grape variety.
Full,
rich flavors, with a light touch of sweetness, complemented
beautifully by a slight tartness and fine-grained tannins
in the background; the richness melds seamlessly into
a pleasantly bitterish, lengthy finish.
Most pastries, full-flavored soft cheeses, and especially
all kinds of almond confections.
